Ars Gusto publishes a two-volume Georgian culinary educational comic collection
Authored by Ekaterine Nadashvili, the collection pairs an illustrated educational comic with a student reader for teaching HoReCa, restaurant management and HACCP.
UG Culinary Academy Ars Gusto has published a two-volume Georgian culinary educational collection, HoReCa Standards, Management and HACCP, authored by Ekaterine Nadashvili, the academy’s Executive Director and lecturer.
The publication connects professional concepts with everyday kitchen and restaurant operations. Visual storytelling, dialogue and practical situations encourage students to understand the purpose of a rule, justify a decision and develop responsible working habits.
Volume I is a 295-page illustrated educational comic covering HoReCa operations, restaurant management, workplace organisation, hygiene, receiving and storage, HACCP principles, allergen control and cross-contamination prevention.
Volume II is a 73-page student reader that complements the comic through structured explanations of professional concepts and working practices. The two formats support classroom discussion, revision and independent learning.
Both volumes are listed in the academy’s academic library. Covers and descriptions are public; full PDFs remain protected and are available according to the library’s existing access rules.
