The vision behind Ars Gusto

Academic leadership

Tinatin Ghudushauri is Director of the School of Arts and Humanities at the University of Georgia, Professor and Doctor of Ethnology and Anthropology. Her academic work spans cultural and social anthropology, ethnology, Georgian studies and cultural heritage.

Founding vision

Her initiative and the support of the University of Georgia helped establish and develop Ars Gusto as a professional culinary academy. Her vision connected university education, research, cultural heritage and modern culinary practice.

Research and education

Her leadership supports educational programme development, teaching and research quality, young scholars, international partnerships and the presentation of Georgian cultural and academic heritage to a wider audience.

Ekaterine Nadashvili is CEO of UG Culinary Academy Ars Gusto, a lecturer, restaurateur and Head of Original Academic Programmes. She develops professional culinary education, academic resources and learning programmes while also teaching restaurant management and culinary marketing.

Academic and professional work

Her work connects education, culinary business, media production, marketing and brand-chef practice. She has created extensive academic and culinary learning resources and contributes to teaching at university level.

Digital projects

She is the creator of ARSFLOW.app and the websites ugdininghall.ge and arsgusto.ge, bringing academic, administrative and professional workflows into connected digital systems.

Education

Nana Kobaidze studied Classical Philology at the Faculty of Philology of Ivane Javakhishvili Tbilisi State University from 1991 to 1996 and qualified as a teacher of Georgian language and literature. In 2007, she completed a course in Integrated Marketing Communications at the Tbilisi PR School of the Georgian American University (GAU).

Journalism and editorial work

Her career includes extensive work in journalism and editing. She worked as a journalist for Dilis Gazeti (1996–1998), Culture Editor at Sakartvelos Gazeti (1998–1999), Culture Editor at Ecodigest (1999), Culture Journalist at 24 Saati (2002–2003), and Culture Editor at Tribuna (2003–2004). In 2009, she served as Deputy Editor-in-Chief of the culinary magazine Madiani, and from 2009 to 2013 she worked as a journalist for Literary Newspaper.

Her articles have been published regularly in a wide range of magazines and periodicals, including Arili, Tskheli Shokoladi, Books, Marani, Parnasi, Kartuli Sitkva, Komagi and Amarta.

Educational and civic work

In 2018–2019, Nana Kobaidze led the Bookworm reading club for primary-school children. She also worked on a freelance basis with the Eastern European Centre for Multiparty Democracy and the UN Global Compact Network Georgia, preparing articles and working as an editor of various texts and documents.

Since 2023, Nana Kobaidze has held the Academic Affairs position. At the same time, she teaches World Culinary History, Georgian Culinary History and Gastrotourism at the University of Georgia's Ars Gusto Culinary Academy.

As a culinary researcher, she contributes to culinary academic literature and curriculum development. Together with Ekaterine Nadashvili, she is working on the Encyclopedia of World Culinary History, which is planned for publication in electronic and printed book formats in the near future.

Professional profile

Nino Skhirtladze is Head of Programmes and Administration, Executive Chef, Lecturer and Brand Chef at UG Culinary Academy Ars Gusto. She is also a restaurateur and creator of original dishes. At the Academy, she leads programme and administrative work and teaches Georgian and European culinary arts, bakery arts and world cuisine.

Education and professional path

Nino Skhirtladze was born in Tbilisi. In 2006, she graduated from the Miguel de Cervantes Aia–GESS Gymnasium and continued her studies at the Faculty of Law of Ivane Javakhishvili Tbilisi State University. In 2023, she successfully completed a master's programme in Administrative Law at the same university.

Her professional experience includes work in private companies, legal consultancy and public service. From 2012 to 2015, she worked at the Civil Registry Agency. In 2018, she founded the Georgian brand Pkhoveli, under which she continues to create handmade accessories.

Culinary education and Ars Gusto

Nino Skhirtladze began working in the culinary field in 2018. She ran a small pastry and bakery business and actively participated in street-food festivals and events. In 2023, she enrolled at Ars Gusto Culinary Academy and graduated with distinction in 2024 as one of the Academy's outstanding students.

Her course project was dedicated to her grandmother Pasha, the region of Racha and, in particular, the village of Mravaldzali. The work brought together family memory, Rachian culinary heritage, creative imagination and technical skill in one remarkable project.

After completing the first four levels at Ars Gusto, she continued her professional development and successfully completed Levels V, VI and VII in world culinary arts and restaurant management. She has served as a lecturer at the Academy since 2024.

International training and creative work

Nino Skhirtladze has completed masterclasses delivered by ALMA, the School of Italian Culinary Arts, as well as professional masterclasses led by Michelin-starred chefs and a range of continuing-education courses. She combines this knowledge with practical experience, creates original dishes and develops traditional culinary heritage through contemporary techniques and an individual creative vision.

Education and management

From 2010 to 2014, Mikheil Melikishvili studied Business Administration at Guram Tavartkiladze University, gaining an academic foundation in business management and administration.

From 2014 to 2016, he continued at the same university in the Master's programme in International Management, deepening his knowledge of management, organisational leadership and international business.

Professional culinary education

In 2015, Mikheil Melikishvili completed the professional cookery programme at Icarus College. This training enabled him to combine his theoretical background in business and management with practical professional skills for the restaurant industry.

Career development at Umami

In 2016, he began his professional career as a kitchen assistant at Umami Asian Restaurant, Radisson Blu Iveria. Within several months he progressed to Commis Chef, became Demi Chef in 2017, and advanced to Chef de Partie in 2020. He currently works as Sous Chef at Umami Asian Restaurant.

This step-by-step progression in a professional restaurant environment has given him extensive practical experience in Asian and Japanese culinary techniques, kitchen organisation and teamwork.

Teaching practice

At UG Culinary Academy Ars Gusto, Mikheil Melikishvili teaches Asian and Eastern cuisines, Asian bakery culture, professional techniques and technologies, plating and service. His teaching connects practical restaurant experience with the Academy's professional programmes.

Professional background

Fabrice Delbart comes from France's Yonne region. His career spans classical and contemporary French gastronomy, professional kitchen management, culinary demonstrations and the mentoring of young professionals. He brings more than 30 years of experience to the classroom.
